Kathy's Tuna Salad

Coleslaw meets tuna salad for a delicious and healthful sandwich filling. Or serve the salad on a bed of greens for a light dinner. The red cabbage adds extra crunch, color, and nutrients while my Dill Pickle Relish brings zing. Want to lighten it up even more? Substitute Greek yogurt for the mayo.

Ingredients

  • 5 oz can tuna
  • 2-3 tbsp mayonnaise
  • 2 tbsp Bubbies Kosher Dill Relish
  • ¼ cup red cabbage, thinly chopped
  • ¼ cup onion or scallions (or both with some of the greens), chopped
  • Salt and pepper to taste

Directions

  1. Drain tuna.
  2. Place all ingredients in a bowl and toss together, if necessary adding a bit more of whatever suits your taste.
