Vegan Sauerkraut Soup

Vegan Sauerkraut Soup

Chock full of veggies and packed full of flavor, this soup is perfect for a cold winter's day. Made by Flax & Sugar this soup is vegan and gluten-free.

Ingredients

  • 1 ½ cup chopped onions
  • 2 tbsp olive oil
  • ½ tbsp fresh oregano
  • 2 cloves of garlic minced
  • 1 ½ cup chopped celery
  • 3 cups chopped carrots
  • 4 vegan sausages sliced- optional
  • 10 cups vegetable broth
  • 4 cups chopped potatoes
  • 3 cups of Bubbies Sauerkraut
  • Salt & pepper to taste

Directions

  1. Wash and slice all veggies.
  2. Place olive oil in a large pot and turn on medium heat. Cook onions and oregano until onions are translucent and fragrant.
  3. Add in garlic, celery, carrots, and vegan sausage slices and sauté for 2 minutes.
  4. Pour in vegetable broth.
  5. Add chopped potatoes and stir well.
  6. Stir in Bubbies Sauerkraut.
  7. Cover and simmer on medium for 25 minutes or until potatoes are thoroughly cooked and soft to a fork.
  8. Dish, finish with salt and pepper, and enjoy!
