Sweet Potato Salad Recipe

Celebrate 4th of July with a delicious recipe and Bubbies Pickles!

Ingredients

  • 2 cups cubed sweet potatoes
  • ¼ cup of chopped Bubbies Kosher Bread & Butter chips
  • ½ tsp of Bubbies Kosher Bread & Butter chips brine (adjust to taste)
  • ¼ cup of chopped red onion
  • ½ cup of mayonnaise (adjust to taste)
  • ½ tsp of paprika
  • 2 tbs dijon mustard of choice
  • 1 tsp dried parsley
  • ½ tsp dried oregano
  • Fresh ground black pepper (adjust to taste)
  • Dash pink Himilayan sea salt (adjust to taste)

Directions

  1. In a bowl, combine chopped Bubbies Dill pickles, Bubbies Dill Pickle brine, chopped red onion, paprika, parsley, oregano, salt and pepper. Mix together and put aside to set in two separate bowls.
  2. Preheat the oven to 450 degrees. While the oven is preheating, cut up sweet potatoes into cubes. Toss in a bowl of one of the marinade mixtures. Once the oven is ready, spread potatoes evenly on a baking sheet and bake for 10 minutes, checking doneness at five minutes and flipping.
  3. While waiting on potatoes to finish, mix mayo and mustard into remaining marinade
  4. Stir until mixture is smooth.
  5. Once potatoes are cooked through, remove from the oven and let cool.
  6. When potatoes are cooled, mix together with mayo marinade and adjust salt and pepper to taste.
  7. Put in a serving bowl and garnish with Bubbies Bread & Butter chips.
