Barbecue Spaghetti Squash Sliders

Looking for an easy, seasonal meal that’ll have everyone talking? Try these smoky barbecue spaghetti squash sliders with Bubbies Bread and Butter Chips.

Ingredients

  • 1 small spaghetti squash (about 3 pounds)
  • Salt
  • Olive oil
  • ¼ head red cabbage, shredded
  • ¼ head cabbage, shredded
  • ¼ cup mayonnaise
  • 1 ½ tsp apple cider vinegar
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 24 slider rolls
  • Bubbies Bread and Butter Chips
  • Homemade barbecue sauce

Homemade Barbecue Sauce

  • 1 cup ketchup
  • ¼ cup apple cider vinegar
  • 2 Tbl brown sugar
  • 1 Tbl honey
  • 1 tsp Worcestershire sauce
  • ½ tsp garlic powder
  • Squeeze of lemon juice
  • A few dashes of hot sauce, optional

Directions

For the Cole Slaw:

  1. Toss the shredded cabbages, mayonnaise, salt and pepper together until combined.
  2. Cover and place in fridge until ready to serve.

For the Barbecue Sauce:

  1. Whisk all the ingredients together in a saucepan.
  2. Bring the mixture to a boil over medium high heat. Then reduce the heat to low and simmer for 10 minutes until it begins to thicken.
  3. Set aside to cool.

  1. Use a fork to scrape out the squash strands into a mixing bowl.
  2. Pour the barbecue sauce over the squash and stir until the strands are thoroughly coated.
  3. Cut the buns in half and place 3-4 pieces of Bubbies Bread and Butter Chips on the bottom half, followed by a spoonful of slaw and a large scoop of the barbecue squash.
  4. Place the top bun on the squash and serve immediately.
