Bubbies Tuna Salad

For those of us who grew up in homes that always had a couple of cans of tuna in the cupboard, this Tuna Salad recipe will be like meeting an old friend. If you haven't had the pleasure of mixing up a protein-packed tuna salad that has just the right balance of vinegary tang - thanks to my Dill Pickle Relish and a couple of tablespoons of lemon juice and capers - let me introduce you. This is the perfect dish to have on hand in the fridge for sandwiches, wraps, or if you're avoiding carbs, piled onto baby greens. Sometimes I serve it with sliced red potatoes for an international flair. Voila! Salade Nicoise.

Ingredients

  • 7 oz jar of tuna packed in oil, drained
  • 2 tbsp Bubbies Dill Pickle Relish + 1 tablespoon brine
  • 2 tbsp capers, chopped
  • 1 small garlic clove, minced
  • 2 tbsp kalamata olives, chopped
  • 1 tbsp shallot, minced
  • 1 tbsp olive oil
  • 1 tbsp freshly squeezed lemon juice
  • 1 tbsp fresh dill, chopped
  • 1 tbsp fresh chives, chopped
  • Freshly ground pepper

Directions

  1. In a medium bowl combine all ingredients.
  2. Adjust to desired taste with more pickle or lemon juice, or more fresh herbs if you like.
  3. Serve in lettuce cups, with crackers, or as a salad topping.
  4. Perfect for sandwiches or wraps!
