Blistered Asparagus with Horseradish Whipped Feta

Ingredients

For the asparagus:

  • 1 lb thin asparagus, trimmed
  • ¼ cup olive oil
  • ¼ cup olive oil
  • ¼ tsp salt
  • ¼ tsp pepper

Whipped Feta:

For Garnish:

  • Lemon zest
  • Flaky sea salt

Directions

  1. Preheat the oven to 425 F and line a baking sheet with parchment paper.
  2. Once you wash and prep asparagus, roast asparagus until tender, about 10 minutes.
  3. Combine feta, yogurt, horseradish, and olive oil in a food processor and blend for 30 seconds-1 minutes, until well combined and smooth.
  4. Spread the whipped feta on a platter and top with the roasted asparagus.
  5. Garnish with lemon zest and flaky sea salt.
